  7. Perennial parsley

Step 1

I put the unsalted butter in a small pan and heated it over low heat until it melted.
While the butter melted, I took the cloves off my full head of garlic and peeled them. I did what Garten said to speed up the process: I lightly smashed each clove on a board with my chef’s knife before peeling it.

Step 2

Then I put my cloves in the pan and made sure the melted butter covered them. I covered the pan and stirred it every so often for 20 minutes.

My garlic was ready after 20 minutes.

I put them in a small bowl and set it aside to cool.

Step 3

To get the bread ready, I cut the baguette in half along its length.

When I was scoring the baguette halves, I put a chopstick on each side. This kept the knife from cutting all the way through the bread.

Then it was time to make garlic bread out of my baguette.
After putting the garlic in the pan, I added the lemon zest, red pepper flakes, salt, and black pepper, and mixed everything together.

I used a lot of the mixture to brush it all over the bread. I put fresh Parmesan cheese, minced fresh parsley, and more red pepper flakes on top of my baguette halves.

Step 4

Then I put my bread in the oven at 450 degrees Fahrenheit for six minutes, until the topping was bubbling and starting to brown.
